Are webhooks active?
Before you start this task, webhooks need to be inactive. If webhooks are on, all the data will sync into Salesforce the minute it is loaded into your Stripe Account.
The first step is to move any historical data from your existing gateway account over to your new Stripe account. Once that is complete, you will need to sync customer, payment method, transaction, and payout data from Stripe to Salesforce.

Is your data located somewhere other than at Stripe?
If your data is with a different gateway and you want to move it to Stripe, Stripe provides a way to move your Customer and Payment Method records from your old/current payment gateway.
